All Candida Friendly - Paleo - Grain Free -- Dairy Free -- Sugar Free Recipes

This coconut butter bark is so delish! My first batch was white without cocoa but I just had to have a mock chocolate bar, and this kills the chocolate cravings without dairy and no sugar!! Instead of hazelnuts and sunflower seeds, this time I used pecans. Sonia's Choco-nutty Coconut Bark: 1.5 cups of homemade coconut butter (or store bought); 2 tbs organic unrefined coconut oil; 1 cup pecans; 1/8 to 1/4 tsp liquid stevia/hazelnut flavor; 1 tbs organic cocoa powder; 2 tbs xylitol; 1/4 cup lecithin granules*, (1/4 tsp sea salt. Melt the coconut butter and coconut oil together in a double boiler, then add all the other ingredients and mix together. Scoop out all that gooey heaven into a 9x13 shallow baking pan lined with parchment paper or wax paper, flatten and smooth out the batter until it covers the bottom evenly with another sheet of wax paper. Place in freezer for about an hour. Take out and break pieces apart. Eat and Enjoy! *optional ingredient. For best results keep the bark refrigerated. It should last for weeks/months in the freezer. Please share! ----------------------------------------------------- Zucchini noodles with garlic, tomato and sunflower seeds, bathed in olive oil and sea salt (new and original creation):
1 spiralized organic green (or yellow) zucchini; 1 clove of organic garlic; 4 slices of organic tomato (or several sliced grape or cherry tomatoes); 1-2 tbs roasted/salted sunflower seeds; 2 tbs organic first cold pressed extra virgin olive oil; 1/4 tsp celtic sea salt. (the ingredients can be modified and mixed up to your taste) I have also varied the recipe with pumpkin seeds and olives. ------------------------------------------------------ Choco-nutty Coconut Bark (with hazelnuts and sunflower seeds):
My new and original creation! Made with homemade coconut butter and lots'o'love. Candida friendly (no sugar), dairy free, grain free. It's completely delicious and is packed with nutrition and healthy fats. You can eat it anytime. Melt the coconut butter and coconut oil together in a double boiler, then add all the other ingredients and mix together. Scoop out all that gooey heaven into a 9x13 shallow baking pan lined with parchment paper, flatten and smooth out the batter until it covers the bottom evenly. Place in freezer for about an hour. This stuff is seriously addicting and amazingly healthy to eat. Candida friendly and Paleo. You must use a very high speed mixer. Approx 7 cups or 10 oz of coconut flakes (organic preferably), 2-4 tbs of organic cold pressed unrefined coconut oil. Blend/mix until a paste forms, start out with 2 tbs of oil, then add additional oil to get the desired consistency. Spoon out into a jar with a tight lid. Store in cubbard for 3-4 months (I promise it wont last that long because you will eat it all probably within two weeks or less). wink emoticon You can use this instead of peanut butter or instead of other nut butters, and you will save tons of money making your own. By making homemade coconut butter, you can change the flavors according to your desires! Say...Chocolate! Honey! Hazelnut! Almond! Vanilla! You could even add a bit of xylitol to make it a sweet treat! ------------------------------------------------------------- Garlic/Rosemary Focaccia Bread: Grain (gluten) free, dairy free, sugar free. Paleo. This is a life saver... It's so much better than "regular" bread, and only took about 30min to make. Hello sandwiches! I'm back! Anyone who has ever been on a candida cleanse or a gluten free diet will absolutely fall head over heals for this bread.
2 tbs of olive oil, 3-4 garlic cloves, 4 eggs, 1/3 cup coconut/hemp milk (or nondairy milk), 2 tbs of chia seeds, 1/3 cup coconut flour, 2/3 cup ground flax seed, 1/2 tsp salt, 1/4 tsp baking soda, fresh rosemary sprinkles about 1/2-1 tsp, cracked pepper. preheat oven to 350, brush olive oil on baking sheet/parchment paper, (i forgot the parchment paper above and it came out fine) mix/blend all the ingredients in high speed mixer until pasty, (some garlic may not fully mix so you can slice those smaller before hand if you don't like chunks of garlic) spread dough in pan and flatten with parchment paper, and brush with remaining olive oil, cook for 20 min or until the sides start to slightly brown, let cool and serve
